Made With • A wholemeal Redeemer and cornmeal loaf studded with an alternating selection of apple, pear or fig. Scented with anise seed and rolled in sesame.
Inspiration • I had a lot of dried figs I was no longer using and same with the anise seed- turns out they are great in bread. One of my personal favs.

Made With • Organic Ontario buckwheat, mixed with organic buckwheat groats, flax, sesame and chia seeds. Studded with hazelnuts. Perfect for those wanting a higher protein bread, a bread that is great for cheeseboards or your vegan dips.
Inspiration • Wanting to showcase my favourite Ontario grain. Buckwheat is great for pollinators, the soil and your gut. Super healthy and loaded with micronutrients.
WALNUT & CINNAMON BABKA

Made With • A wholemeal enriched dough, made with an oat porridge, Redeemer wheat and White fife. So tender and buttery, I love this bread for breakfast, a snack or lightly griddled wit butter and topped with ice cream for dessert.
Inspiration • I struggled for a long time developing a wholegrain brioche. Finally landing on one with the Taiwanese method of making a porridge to soften the dough and give it a feathery consistency.

Made With • Estonian style rye, is not too sour. The crumb is soft and fragrant. Makes fabulous toast.
Inspiration • This recipe is from my friend Laura Valli, who is Estonian and got her PhD in rye breeding!!

Made With • Wholemeal Redeemer and White fife and an oat porridge, this brioche is soft, yet has heft and loads of flavour. it has a leaven, but also contains commercial yeast.
Inspiration • This formula is heavily based on one by my friend, Charbel Abrache. Pastry chef extraordinare down in D.C.

Made With • A 100% unsifted sourdough wheat loaf, made with Redeemer wheat and a spelt porridge. Perfect for sandwiches, or toast. The crumb is soft and fragrant. Love this toasted and slathered with salted St Brigid’s 84% butter and my Seville marmalade.
Inspiration • The Redeemer wheat was grown by Paul Salanki of Loonsong farm. Paul is a big fan of single varietal wheats that taste great and yield well, so the grain is affordable. I have a limited amount, as Paul is in search of a farm…fingers crossed he lands on his feet soon.
1 KILO SPROUTED SPELT SOURDOUGH

Made With • Made with unsifted/wholemeal spelt flour and sprouted spelt berries, this pan loaf has a tender crumb and thin crisp crust. The berries give it a nice chew, but are also soft enough so it can be used as a sandwich bread.
Inspiration • This spelt is grown by Peter Leahy of Merrylynd organics. Peter was my original grain grower. I love his spelt and am happy to continue our relationship of over 15 years.

Made With • Like little brownie bombs of gingery chocolate goodness. The earthiness of the buckwheat really plays well with chocolate and candied ginger.
Inspiration • Based on Luminary Bakery of London, olive oil shortbread. This cookie has gone through many iterations, resulting in an almost savoury chocolate bite. Don’t have to be a vegan to love this cookie.

Made With • Candied, dried and fresh gingerroot is the key to the bite of this cookie, and a little black pepper and mustard bring it over the top. A truly unique cookie, made all the more special with rye flour.
Inspiration • My friend, Sophie of Raven bread, who convinced me to add fresh ginger to the cookie. Yes, it’s more work but worth it.

CHOCOLATE RYE & MALDON SALT SHORTBREAD

Made With • Well ,the name pretty much says it all. 100% rye, with cocoa powder, sugar and loads of butter. Studded with dark chocolate pistoles and cocoa nibs from Soul Chocolate. Topped with a crunchy little hat of Maldon sea salt.
Inspiration • Based on Dorie Greenspan’s fabulous World Peace Cookies, but somehow moreish. One of my personal favs.

Made With • 100% oatmeal cookie, with lots of flame raisins and freshly grated nutmeg. Everything an oatmeal cookie should be. Crunchy and chewy and just sweet enough.
Inspiration •I wanted to make a vegan cookie, that didn’t taste like a vegan cookie- it had to have mouthfeel and satiety and texture and not be overly sweet, as so many vegan items can be. I think it is a delicious cookie that happens to be vegan and GF.

Inspiration • Betty Crocker’s the ubiquitous yellow cake mix found on every grocery shelf. It’s a cult favourite at the markets.

Made With • A tender sourdough cake-bread, sweetened with bananas and maple syrup and the lightest amount of sugar. All buckwheat with sesame seeds and walnuts. The buckwheat levain, gives the crumb a sturdier texture and more depth of flavour.
Inspiration • I am not a big fan of importing fruits or veggies, but everyone loves banana bread. We use organic fair trade bananas from Equifruit, sourced via Pfennings farm.

Inspiration • All produce sourced from the markets and farmer friends. Pinehedge kefir is drained for labneh and mixed with herbs and leeks. The puff pastry is with organic Ontario Redeemer and Spelt wheat.

Inspiration • My friend, Danielle, who made the best granola I’ve ever had. Butter is the key.
